Old Man Weather’s Chili

Ingredients

  • 16oz block veg ground chuck (Beyond Meat/Impossible)
  • 2 cloves garlic, chopped
  • 8oz can tomato sauce
  • 2 Tbsp ancho chili powder
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • 1/2 tsp salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup masa harina (fine ground corn meal)
  • 15-ounce can kidney beans, drained and rinsed
  • 15-ounce can pinto beans, drained and rinsed

Method

  1. Sautee the ground chuck and garlic in a large pot, over medium heat, until browned. 7-10 minutes.
  2. Add the tomato sauce, ancho chili powder, cumin, oregano, salt and cayenne, then stir well. Reduce to a low heat, cover, and let cook for 30m.
  3. Check the chili to make sure it still has liquid in it, add 1/2 cup water if not, then cover again and let cook 30m more.
  4. Combine the masa harina in a bowl with 1/2 cup water, and stir to loosely combine. Add to chili pot and combine well.
  5. Add rinsed pinto and kidney beans to chili pot, combine well, and let simmer while covered 10m.
  6. Let cool and enjoy!
