Ingredients

  • 150g all purpose flour (1 1/4 cups)
  • 156g yellow corn meal (1 cup)
  • 132g granulated sugar (2/3 cup)
  • 1 tsp salt
  • 1 Tbsp baking powder
  • 1 1/4 cup soy milk (or full fat oat)
  • 1/3 cup canola oil

Method

  1. Preheat the oven to 400 degrees F and lightly grease a 8 x 8 pan, or a 9 inch round cake pan, or small loaf pan, or cupcakes tin.
  2. In a large bowl, combine the flour, cornmeal, sugar, salt and baking powder and stir.
  3. Now pour in the milk and canola oil. Stir until well combined. Pour batter into prepared pan.
  4. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. The timing here will largely depend on the shape of pan you decided to use, but you can start with 18m in a cupcake tin, 20m for a shallow baking tin, and 25m for a loaf pan.
