Ingredients

  • 107 g brown sugar (½ cup)
  • 99 g white sugar (½ cup)
  • 114 g Earth Balance (½ cup), at room temp
  • 3 very ripe bananas, mashed well
  • 240 g flour (2 cups)
  • 1/2 tsp baking soda
  • 1/4 cup soy milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/2 tsp salt

Method

  1. Whisk together soy milk and apple cider vinegar, then set aside to curdle a bit.
  2. Preheat oven to 350 F.
  3. Spray a 8×4 bread pan with non stick cooking spray, or lightly coat with Earth Balance.
  4. Sift together flour, baking soda, salt, cinnamon and allspice.
  5. In a separate bowl, cream together the Earth Balance and sugars, which is culinary speak for whisk them together vigorously.
  6. Add bananas, soy milk mixture, and vanilla.
  7. Add the wet ingredients to the dry, then mix well.
  8. Pour batter into pan, then bake for 1 hour to 1 hour 10 minutes.

Notes

  • In baking terms, by “creaming” or whisking together sugar and margarine (more traditionally butter), you aerate the margarine with sugar granules, creating small pockets that will ultimately catch the gasses emitted by baking soda and other leaveners.  These gas-filled air pockets will then give the baked good its rise.
  • This is a dense batter, so be careful not to overwork the mixture, else the apple cider and baking soda won’t be able to do their thing.  This is true too of omnivorous baking, but especially so of vegan baking.
