Cashew Cream

Vegan

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup water
  • pinch salt, optional

Method

  1. Bring a small pot of water to boil, add the cashews, then cover and let cook for 20 minutes.
  2. Strain the boiled cashews.
  3. Using either an immersion or tabletop blender, puree cashews, water, and salt until very, very smooth.

Notes

  • We have a KitchenAid immersion blender I use all the time, that ran me about $40 on sale.  There are less expensive options though (check this Hamilton Beach out), and I would choose it over a countertop blender any day.
