Cornbread
Ingredients
- 150g all purpose flour (1 1/4 cups)
- 156g yellow corn meal (1 cup)
- 132g granulated sugar (2/3 cup)
- 1 tsp salt
- 1 Tbsp baking powder
- 1 1/4 cup soy milk (or full fat oat)
- 1/3 cup canola oil
Method
- Preheat the oven to 400 degrees F and lightly grease a 8 x 8 pan, or a 9 inch round cake pan, or small loaf pan, or cupcakes tin.
- In a large bowl, combine the flour, cornmeal, sugar, salt and baking powder and stir.
- Now pour in the milk and canola oil. Stir until well combined. Pour batter into prepared pan.
- Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. The timing here will largely depend on the shape of pan you decided to use, but you can start with 18m in a cupcake tin, 20m for a shallow baking tin, and 25m for a loaf pan.
