Lentil Sloppy Joes
Ingredients
- 1 cup (186 g) green lentils (uncooked)
- 4 cups water
- 1 Tbsp olive oil
- 1 yellow onion (diced)
- 1 green bell pepper (diced)
- 2 cloves garlic (minced)
- 2 tsp oregano
- 1 tsp salt
- 8 oz tomato sauce
- 1⁄4 cup tomato paste
- 3 Tbsp maple syrup
- 1 Tbsp spicy mustard
- Buns for serving.
Method
- Put the lentils in a small sauce pot, pour in 4 cups water, then cover and bring to a boil.
- Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.
- About 10 minutes before the lentils are done, preheat a medium soup pot over medium heat.
- Sauté the onion and pepper in the oil for about 7 minutes, until softened.
- Add the garlic and sauté a minute more.
- Add the cooked lentils, oregano and salt, and mix.
- Add the tomato sauce and tomato paste, and mix.
- Cook for about 10 minutes.
- Add the maple syrup and mustard, mix, then turn the heat off and let sit for about 10 minutes.
Notes
- If you’d like a spicy version of this recipe, include 3 Tbsp chili powder along with the other ingredients in step 6.
