Ingredients

  • 1 cup (186 g) green lentils (uncooked)
  • 4 cups water
  • 1 Tbsp olive oil
  • 1 yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 tsp oregano
  • 1 tsp salt
  • 8 oz tomato sauce
  • 1⁄4 cup tomato paste
  • 3 Tbsp maple syrup
  • 1 Tbsp spicy mustard
  • Buns for serving.

Method

  1. Put the lentils in a small sauce pot, pour in 4 cups water, then cover and bring to a boil.
  2. Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.
  3. About 10 minutes before the lentils are done, preheat a medium soup pot over medium heat.
  4. Sauté the onion and pepper in the oil for about 7 minutes, until softened.
  5. Add the garlic and sauté a minute more.
  6. Add the cooked lentils, oregano and salt, and mix.
  7. Add the tomato sauce and tomato paste, and mix.
  8. Cook for about 10 minutes.
  9. Add the maple syrup and mustard, mix, then turn the heat off and let sit for about 10 minutes.

Notes

  • If you’d like a spicy version of this recipe, include 3 Tbsp chili powder along with the other ingredients in step 6.
